Winter windows and mini lemon cheesecakes...



Last night looking out the kitchen window.
The snow looks so pretty resting in the corners of the panes.



This morning
It's still snowing and blowing
It doesn't seem so pretty anymore.

Trying a new recipe for dessert tonight.
Mini-Lemon Cheesecakes
Since I didn't have the chocolate cookies for the crust,
I made the Chocolate Snap Cookies
as MJ suggested.
The recipe is "gluten free" in the original recipe but I'm using flour.

The little choco cookies are terrific!
And easy!
I'm just pressing the whole cookie into the bottom of a lined muffin tin and pouring the lemon cheesecake filling inside.  The recipe calls for frosting, but instead, I'll just shave a little lemon zest on top of each on.


I set one of the chocolate cookies beside the mini-cheesecake just because I thought they had such pretty crackle tops and they go unseen at the bottom of the cake.
I can't wait for dessert!

  5. You are a very strong-willed gal. I'm not sure I could wait for dessert. Don't you think someone should sample those little bits of lemon love to make sure they're o.k.? LOL! They look lovely.

  7. I'm still reading The Long Winter under the covers, at night. It looks like you are having that kind of storm! Stay cozy, Jody! I wish I had some dessert around here. Yours looks delicious. After I finish The Long Winter again, I'll read The Children's Blizzard. I've been reading young adult novels and I'm ready to switch it up. Off to the kitchen to find something lemony!

    I just finished The Long Winter. I was so glad they finally got to spring. I was worn out by the end of the book. All that twisting of hay for the fire and grinding wheat for their only food -- brown bread. Ugh.

  15. It's so pretty out that window! And your little cheesecake treats look sooo good. I love all of the craftiness and cooking you've been sharing. I may not be much of a crafter myself (I just haven't found my "thing" yet, I'm sure!), but I can appreciate it!
