Foods I'm eating....

Open-faced tomato sandwich
Recipe:
Toasted bread, spread on mayo, add a thick sliced tomato, sprinkle salt & pepper.

The FF (family favorite)
Sent a couple dozen to J. in Tucson.

This is the "before" shot.
The recipe calls for sauteing the onions and veggies.  I did not.
It's a great recipe for kids to make since you use flour tortillas for the crust, and it's a quick supper for two.

Next is the "after" baking.

I don't have a baking stone (as called for in the original recipe) but instead, I use a regular cookie sheet.  Set the timer for 10 minutes and check pizzas.  Mine are usually done by this time.
I'm alone tonight so I made me a Garden Pizza -- all veggies & cheese -- tomato, onion, green pepper, olives, fresh basil and flat leaf parsley from the garden.  Make it Your Way!  Eat with your hands.

  1. Dh and I like the ultra thin crust pizza's too. Love the crackery crunch! I love tomato sandwiches too!! But DH won't touch them. Your molasses cookies look so yummy! I need to bake some cookies and send them to my son at college and his house-mates. (first year out of the dorm for him.)

  4. What a great idea for the pizza. We had some leftover meat from tacos -- making little pizzas would be perfect. Thanks for the tip!

  5. Pizza looks delish! I actually recently purchased a baking stone and can't honestly tell the difference between when I use it and a cookie sheet.

  8. I had the same tomato sandwich for lunch - except mine was made with cherry tomatoes. They're the only ones ripe so far. I like the pizza idea - I'm going to try it. And the cookie recipe is added to my file under "Jody's Soft Molasses cookies" (You're getting the credit :)

  9. We love the tortilla pizzas; quick and easy to have when we come in late from the field. Mine aren't as healthy as yours since I add pizza sauce, pepperoni slices or sausage, shredded mozzarella and cheddar cheese. And I know without a doubt the cookies are delicious!

    This summer, I began making thin crust pizzas on the grill...what a quick, tasty and easy meal...it's my new favorite way to make pizzas.

  13. Yummy treats! Sad to say, my tough little cherry tomato plant has also given up the ghost, so no more homegrown around here.
    And we love molasses cookies around here too -- so sweet and chewy! I was given the recipe I use by my late husband's adorable grandmother many many years ago -- a family heirloom now.
